when he was fighting the patrons, they used the Winter Soldier theme from CA:TWS, right? Specifically, the metallic scream heard here (you can also hear the edited version of Bucky’s scream from CA:TFA at the beginning) To me, that symbolizes that there’s still a little bit of the programming inside of him, that scream is telling us that he’s not entirely Bucky yet. 

Did you see how easily he “slipped back into form”? There was a look of hesitation at the beginning, but at the end he had that look from TWS, the wide eyed one that tells us that something is wrong.
