In Last of the Time Lords, when Jack told Martha and the Doctor that he was the Face of Boe, he knew exactly what he was doing. In Utopia, Jack is with the Doctor when Martha warns him about Yana, and the Face of Boe is mentioned by name. Jack heard them talk about the death of the Face of Boe, and suspected that they were talking about some future, unrecognisable version of himself.  So he told them the story of his youth on Boeshane, just to say “btw, that guy you were talking about? Guess what.” 

So he knew that he would survive this ordeal with the Master, and that someday he would finally get to die. Also that he would age enough that his pretty face might not be recognisable one day!
