I totally get this! In fact I think Din following the Way as strictly as he does in canon makes for a very sweet and tender moment for when he does finally show Luke his face
Now I love love love dinluke fanfic, but my biggest gripe (which isn't really a gripe but that's the word I'm using) with the ones I have read is that Din regularly has his helmet off. It's not just him taking it off in front of Grogu or Luke. He has it off in front of anyone and everyone when, even after those who don't wear their helmet are accepted, Din chooses to follow the way he was taught to follow it in canon. It's not that big of a deal, but it's definitely something.
