My theory on Ithelia's appearance in the cinematic being so Human, her domain being shared with Mora in some ways (though prince of fate is a title shared by several), and how a "new" daedric prince can be accommodated into existing lore is that the current arc will end with Ithelia becoming mortal by choice.

Think about it. Zenimax can't retcon existing games that happen in the future from ESO's time, especially not a detail as massive as a forgotten daedric prince, and it's wild to even think they would attempt it. All of their lore expands upon existing lore, which Ithelia very much does not - she changes it. Killing a prince who is a threat isn't an option (look at Jyggalag into Sheogorath). Her domain even seems related to the player, in the sense that the player the Hero (capital H) with the ability to rule their own destiny and obscure their fate in ways unique from other mortals. Ithelia is known as the Fate Changer and was determined to be too much of a threat to the other princes because of what she might do.

I think she and the player might relate to each other almost too well - Ithelia always admiring mortals for their freedom compared to princes who must Act and Be what they Are, and takes her form as that of a mortal - and when Ithelia is inevitably faced with imprisonment again at the end of the story, she may be able to bargain for giving up her godhood to become mortal, potentially even becoming an adventurer, like you.
