Torbin dies because his heart breaks for whatever happened with Mae in the past, 16 years ago. She can't touch him until she weaponizes his heart against him. Sure, you can kill Jedi with overwhelming numbers against them, but if you don't have numbers, how do you get under a Jedi's defense? Use their compassion, use their care for others, use their connections to wanting to help others against them. These Jedi died because they cared.
