(Spoilers for a 17 year old movie) My interpretation of Jack's death in Brokeback Mountain is that he really did die in a freak accident and his wife was telling the truth to Ennis. Ennis has simply been so traumatized by his childhood memory of witnessing the aftermath of a homophobic hate crime that it's immediately what his mind jumped to upon hearing about his death. The bittersweetness of the film's ending is Ennis being able to overcome this image he has of Jack as being a victim and their relationship as something shameful - by meeting Jack's (relatively) accepting parents and keeping their shirts as an heirloom. By the end of the movie Ennis has come to view Jack as a lover he will never forget, kept safe and cherished within his heart and memories (hence the shirt switch symbolism). The final triumph of the film is that Jack will not be remembered as a victim to Ennis, but as his true love.
