After working in a place where there was a grease fire that no one but me knew how to put out (and I had to STAND IN FRONT of my manager as she reeled back with a bucket of water), I've become a little bit insane about fire safety. There are SO many people-- fry cooks and regular people alike-- who have no idea how to put out a grease fire. Unlike a non-grease burn, a grease fire can get out of control in literally ten seconds, and your first reaction-- to dump a cup or a pot or a bucket of water on it-- will literally make it explode. You will be badly burned and the fire will jump from your kitchen to the rest of the building with TERRIFYING swiftness.
