hi! the ones on the forefront of my mind are all chinese short stories (with english translation available don't worry) but i will amend this post with more as it comes to me:

"A Madman's Diary" by Lu Xun (i would say this is his most famous short story, cannibalism in his works usually represent fear of progress, blind worship of superstitions and traditions, self-mutilation/national stagnation)

"Medicine" by Lu Xun

"New Year's Sacrifice" by Lu Xun (while the cannibalism isn't overt in this one, I would argue there is sufficient parallel and allusion to socially isolated people as 'sacrifice')

"The Reincarnated Giant" by Wang Jinkang (i linked the chinese sci-fi anthology it was a part of, but it's the twelfth story in the collection. endless consumption + cannibalism as a metaphor for corporate greed and capitalism)

i also recommend the book From Communion to Cannibalism: An Anatomy of Metaphors of Incorporation by Maggie Kilgour which is both an overview and selective deep-dive of the landscape of cannibalism as a trope in western canon; and i made a list of other books abt consumption a while ago here

bonus: not cannibalism, but The Carnivorous Lamb by Agustín Gómez-Arcos explores incest as a motif for the rigidity (and perhaps a violation) of authority in the context of the francoist dictatorship in spain, if you're interested in more works of similar subjects (re: cannibalism and incest as literary tropes placing the agent too close to its subject)
