Truthfully my interest in shiny Pokemon has been rather limited since discovering it doesn't affect their power. Still! A curious thing. The only evolutionary advantages I can think of are that the colours could confuse their predators, or their eye catching gleam could turn them into a 'sacrifical lamb' as it were, keeping the eyes off of the others in their pack if they were attacked. ...Not a pleasant thought for Appli-Appletun.
