It is common for humans to hunt animals merely just for fun, there is evidence of this since prehistory. Combine it with the fact there are no other dragons in the End and you'll see it's probably the case here that the dragons were killed without any purpose

The End Crystals works only for Ender Dragon well-being, its usage being for preservation and resurrection. Assuming the crystals were made by other humans to protect whoever tries to kill the Ender Dragon, it is plausible to assume that the few humans left were trying to preserve the last one dragon

And what do we do? We destroy every remaining defensive mechanism and fucking kill the last one dragon without any purpose
