imo the best way to interpret those “real people don’t do x” writing advice posts is “most people don’t do x, so if a character does x, it should be a distinguishing trait.” human behavior is infinitely varied; for any x, there are real people who do x. we can’t make absolute statements. we can, however, make probabilistic ones.
for example, most people don’t address each other by name in the middle of a casual conversation. if all your characters do that, your dialogue will sound stilted and unnatural. but if just one character does that, then it tells us something about that character.

Im not quite sure about this but I don't think you can build tolerance to hemlock, as it's not an immune system thing. Half certain that means that small dosages can accumulate into a fatal one later on? I haven't looked into it much but I saw a bit about that
I’ve seen a few whitepine theories by now, and the ones that have stuck with me the most were two specifically:
1) the thing that killed Mysti was “the monster” that lives in the forest. The person who had this theory went on to explain that the one true moment where we feel fear in the first episode was when ivory was looking at the forest. Right after that scene, we have a shot of the stairs (where Mysti was found). Foreshadowing goes harddd
2) someone on this app (I forgot your username, sorry!) said that we weren’t looking for a killer, but more specifically for the plant hemlock. It is also explained that said plant can kill someone with painful skin marks, etc. The person stated that when Ivory is being introduced to the maids and butlers, there’s a shot of Mysti eating (she could be eating a hemlock plant, and that was what caused her death)
I honestly think the story could go in many directions, but it’s hard for me to believe we’re looking for a specific person to be the killer. What do we think???
You are right, unfortunately I am not crazy educated on this and I just happen to really enjoy researching it lol. It sucks because a lot of articles on hemlock poisoning just list symptoms and then say "call a doctor immediately," but I did manage to find some stuff.
It takes around 15 minutes for the poison to set in, sometimes more, sometimes less. Depends on the dosage and which part of the plant, I'd assume. If it's a fatal enough dosage, you can die within this time, but sometimes it may take hours. However, if you manage to flush it from your system and survive, you can still have seizures for several days, as well as muscle twitching + restlessness for months. The reason it kills is because it disrupts communication to the muscles, which includes your respiratory muscles—patients usually die of asphyxiation, I think. That's a severe case though. That does mean that if you die, it'll be quickly, and not after a couple weeks or anything. You'd feel it when your body decides oops not time anymore.
Hemlock is meant to cause confusion, which is a big hole in this theory—it strikes me how composed Pyro is after vomiting. That's kinda what makes me think he was giving it to himself, if he was receiving it. It'd explain why he didn't tell anyone, as he knew it wouldn't be contagious.
He would have had to have had really old hemlock or a very small dosage, though, to be as normal as he was. That, or it happened awhile ago, and he's still feeling side effects. That's possible too!
Also, hemlock looks a lot like wild carrot or parsley. I doubt anyone's going foraging in the forest for lunch here, but it'd be easy enough to disguise if you so desired. Also easy enough to mistake.
The oddest thing about this theory is that he's alive. They don't have high tech medical equipment at the manor I assume, which would be required for an average poisoning. The more I research it the less I'm convinced, but it would be very thematic and I'm not sure if cc Ivory actually dug this far.
