Vegetarian Sausage and Gravy and Homemade Biscuits

You know that old southern standby
Sausage Biscuits and Gravy and Hot Flaky Biscuits
Oh. My. Good.
If some of you remember from a previous post, I hail from a small southern town in Kentucky
So I know Biscuits and gravy, my dads specialty is Biscuits and gravy, his favorite saying is “Gravy so good, if you poured it on your head, your tongue would beat your brains out trying to get to it”
But I digress
However, I admit that Sausage Gravy and Biscuits is something I do crave from time to time
So I went digging for a recipe
Biscuits were no problem, I’ve been making biscuits since I could hold a wooden spoon but finding a way to create a sausage substitute
And Dammit I’ve been successful

Homemade Biscuits
2 cups all-purpose flour
1 Tablespoon baking powder
1 Tablespoon granulated sugar
1 teaspoon salt
6 Tablespoons cold, unsalted butter
¾ cup whole milk
Preheat oven to 425F and line a cookie sheet with nonstick parchment paper or spray
Combine flour, baking powder, sugar, and salt in a large bowl and mix well
Cur your butter into your flour mixture using a pastry cutter or a box grater to shred the butter into small pieces and then add to the flour mixture and stir
Combine the grated butter until the mixture resembles coarse crumbs
Add milk, use a wooden spoon or spatula to stir until combined but not overworked
Transfer your biscuit dough to a well-floured surface and use your hands to gently work the dough together. If the dough is too sticky, add flour until it is manageable
Once the dough is cohesive, fold in half over itself and use your hands to gently flatten layers together. Rotate the dough 90 degrees and fold in half again, repeating this step 5-6 times but taking care to not overwork the dough
Use your hands to flatten the dough to 1" thick and lightly dust a 2 ¾" round biscuit cutter or cup with flour
Cut out your biscuits
Once you have gotten as many biscuits as possible out of the dough, gently re-work the dough to get out another biscuit or two until you have at least 6 biscuits
Bake on 425F for 12 minutes or until tops are beginning to just turn lightly golden brown
This biscuit recipe is as basic as it comes
I recommend using a small, cheap plastic cup (like the ones you use for beer pong) to cut the biscuits
Also brushing the tops with some melted butters can make all the difference
One your biscuits have settled in the oven, you can start on the sausage gravy
Now the best product I’ve found to replicate sausage is a product called Gimme Lean
It’s not Jimmy Dean, it’s Gimme lean

It’s in the refrigerator vegetarian section of your local market
It looks like sausage
It taste like sausage
And it will relieve those cravings

“Sausage” Gravy
1 tablespoon vegetable oil
½ (14-ounce) package meatless sausage
¼ cup all-purpose flour
3 cups 1% low-fat milk or nut milk
½ teaspoon salt
¼ teaspoon freshly ground black pepper
Heat oil in a large nonstick skillet over medium-high heat. Add sausage; cook 3 minutes or until browned, use wooden spoon or fork to crumble
Lightly spoon flour into a dry measuring cup; level with a knife.
Combine flour and 1% low-fat milk, stirring with a whisk until smooth.
Add milk mixture, salt, and freshly ground black pepper to pan; bring to a boil over medium-high heat. Cover, reduce heat, and simmer for 3 minutes or until thick.
And that’s it
Crack open those hot biscuits and layer your ecologically conscious gravy on top like your on The Great British Baking Show
Make this for breakfast, a heart dinner, or simple an indulgent treat
And if you can’t find Gimme Lean, any other meat free sausage will do so long as you can crumble it

Ratatouille casserole 🍆🍅🥒with eggs 🍳
Layered veggies and bedded on spinach and tomatoes with a little egg hat and my ratatouille casserole is done. 👍🏻✨
Ingredients for a small casserole dish:
1 can of canned tomatoes 🍅
2 handful spinach
1 onion
1 garlic clove
1 medium-sized eggplant
1 medium-sized zucchini
4 tomatoes
Fresh herbs like oregano, basil, rosemary, thyme
100 g feta cheese 🧀
30 g pine nuts 🥜
3 eggs 🍳
Preparation:
Chop the onion and garlic glove.
Roast the chopped onion and the garlic glove in a pan with oil.
Add the canned tomatoes and the spinach and boil them down with herbs, salt and pepper.
Pre-heat the oven to 180C.
Wash and slice the tomatoes, eggplant and zucchini.
Add the boiled down tomatoes in a casserole dish. Layer the tomatoes, eggplant and zucchini and season to taste with salt and pepper.
Crumble the feta cheese over the veggies, then put the casserole dish in the oven for 20 minutes.
Then crack the eggs onto the casserole and spread the pine nuts on top.
Now back in the oven for 25 minutes.
