I just think that if Gojo wanted a change then he would have gone for something to look different.

But his hair looks the same as it did back in high school (when it's not held up by the blindfold).

Gojo dresses the same, the only difference rly is that he doesn't wear buttons on his clothes. (Yes I'm thinking about him holding Suguru's button so hard it makes blood drip down his hand. Even though Gojo has infinity and Geto just killed a village, Gojo was not ready to push him away.

My other headcannon here is that Geto used to give him head massages, so Gojo was able to get by with just wearing sunglasses (even if they were opaque, they didn't wrap around the sides).

Without Geto by his side, Gojo's sensory issues became worse. He was sent out all the time, and he accepted the missions to fill the void. But it would drive him to burnout and breaking down, so the compromise was that he'd wear blindfolds whenever he needed to. Which became almost all the time (remember how in JJK0 his students didn't recognize him without the blindfold, despite him being the most well-known sorcerer of the modern age).

Gojo's undercut IS a product of convenience. You know how messy and uncomfortable it is to wear a blindfold knotted into your hair? Then just shave half of it off and it's so much better. Shaved hair is a better sensory experience, and we already know he has sensory issues especially photophobia but I wouldn't be surprised if he uses infinity to avoid certain textures.

Blindfolds not only cover more area than glasses, but they also apply even pressure on the head. I think it's similar to a stim, like a weighted blanket or something to prevent/relieve headaches.

Idk why I didn't think to add this before but Yuta's shoes are also white, and the drawstring on his pants. Like Gojo knew that kid was super depressed and just wanted him to be comfortable. He even gets a black t-shirt for under the jacket.

What's special about both of these cases though is that these kids were sentenced to execution - they didn't get to enroll like normal and have an option to fill out the customization form (tbh I suspect that Nobara's grandmother kept that from her bc if she knew, there was no way she'd be talked out of moving to Tokyo).

Even if they did have the time and opportunity to choose their own uniforms, it would have stressed them out. Yuuta was suicidal and Yuuji had a lot to suddenly prepare for his grandfather's death and moving. He was always indecisive about clothes anyway, which is the only reason he wears hoodies so often.

No one else at either Jujutsu school - though they all wear different uniforms - has another color on theirs. I doubt students even have the option to change that, as it only happens under special circumstances and when requested by Gojo.

No one ever seems to notice or address this, except for Yuuji pointing out that his is different from Fushiguro's and has a hood. At that time, he had only seen those two uniforms.

Gojo always has this reputation for being out of touch, oblivious to the feelings of those around him. But as someone with sensory issues and a rare power that sets him constantly apart from others, I think he rly put the effort in to make sure they felt good in their uniforms. It's so sweet but the only time anyone mentions that is when Fushiguro said "be careful, Gojo has a habit of doing that/is quirky like that (depending on the translation)".

Gojo misses social cues and he doesn't always bend to fit in with social constructs, I mean he wears blindfolds in public ffs, but he really does try to empathize and do what's best for those around him, especially his students.

My thoughts on Yuuji's customized school uniform

Fushiguro said that Gojo has a habit of doing that sort of thing- but he only did it for Yuuta and Yuuji.

Yuuta has the white jacket to represent Rika. Pale and external but covering him. Something that might be removed.

Yuuji's hood, shoes, and the shirt under his jacket are red. Red like sukuna's fingies and eyes, or like Yuuji's old shoes. Always a part of him.

Yuuji's pants also have a different shape. They're wider and shorter. I think Gojo was taking precautions to have Sukuna's vessel easy to recognize in a crowd, but to also let Yuuji be comfortable. He was facing a lot of change and loss in a short time, and Gojo recognized that. So the uniform fits like the clothes he would usually wear.

I don't know if this was to pacify the higher ups on Gojo taking in first years with special grade curses that didn't know anything about jujutsu. It could have been his own, unusually responsible choice.
