There's some extra bits of characterization there, yes, but nothing of any greater import than the normal route.

Speaking as someone who loves horror and is a massive fan of stuff like Silent Hill, Imscared, Darkseed, and the like, I really feel like the most enjoyment and depth is garnered from the pacifist routes of Undertale and Deltarune, not the dark routes. The game feels built around urging you to explore and choose kindness. You get to see the results of what happens if you don't, but your result is just what it would be in real life, which is unfulfilling utter bleakness. There's no reward for being cruel, and that's on purpose. The reward is in persevering in being the best you can be, never giving up on people even if they've given up on themselves, and loving the unlovely. And showing that there's some level of goodness in everyone.

It's kind of sad, but admittedly interesting, that people gloss over that, opting to try and find deeper meaning in the one place that meaning was specifically and intentionally denied.
