I like to think that at the start of every meal Akutagawa picks apart his food with his utensils, even if it's a food that doesn't require them

It's partially due to sensory issues and not wanting to hear the fork scraping against the plate whenever he takes a bite (it makes him feel like there's sandpaper on his bones)

It's also to see every ingredient that's visible, just in case

When it comes to foods that don't require utensils, he doesn't like how the grease/crumbs feel when eating. Like, he doesn't want his hands to touch the food. This man will look you dead in the eyes while eating pizza with a fork and knife.
