This week I tried to change up one of my personal recipes, Chocolate Lime Muffins, by switching to an XL muffin pan. Since I didn't have XL cups, it didn't quite work out, but they still look nicer than when I made them in a standard sized muffin pan. The smaller cups also meant that I had a little batter left over, so I used it to make a handful of mini muffins. My Chocolate Lime Muffins were inspired by some Stargate: Atlantis fanfiction, and are actually labeled Foster's Muffins (Damn You McKay) in my cookbook, but I don't really want to share that recipe. Instead, here's one I found (took me ages and some clever googling to locate one that used the ingredients I wanted) to help me decide what measurements to use when I was originally planning it out. While I've technically never made the recipe like this, the Lime Muffins are amazing, so I'm sure it's good.

Chocolate Muffins source 2 eggs 1 cup sugar 1 cup all-purpose flour 6 tablespoons unsweetened cocoa powder 2 teaspoons baking powder 1 teaspoon vanilla essence 2/3 cup milk 2/3 cup butter 4 oz semisweet chocolate chips (optional)

Preheat oven to 350°F

Grease 6 XL muffin tins or cups (paper cups recommended) or 12-15 medium cups

Beat the eggs with sugar; mix with flour, cocoa powder, baking powder, vanilla and milk.

Fold in the melted butter

Add chocolate chips; coat them with flour before mixing into the batter.

Bake at 350°F until a wooden pick inserted in center comes out out clean, about 30 minutes for XL muffins, about 20 for medium size muffins.

The site I finally found this recipe on had some insteresting user variations suggested, but I've never bothered to incorporate any of them. -Laur
