Ok so chili peppers. Im on board with the idea that people overboard capsaicin for the endorphin rush caused by non-injurious acute pain. Got it. But that doesn't explain why a lot more people prefer a low to moderate level of spice exposure in their food. There's an argument to be made for variety in food being attractive, regardless of what that taste/sensation is, and I LOVE bitter chocolate so I get that from multiple flavor perspectives. But I've also heard that capsaicin causes mild irritation of the tastebuds, making them more sensitive to the already extant flavors in the food. Anyone know of data that proves/disproves this?
