Fusilli Pasta with Ground Beef and Ragu Sauce with Cheese. This hearty and flavorful pasta dish is perfect for a weeknight dinner or a weekend get-together. The ragu sauce adds depth and richness to the beef, while the Parmesan cheese and fresh parsley add a burst of flavor to the dish.
Recipe: Veggie, Pasta, & Cheeze
So, I’m sharing with you all my version of veggie mac & cheese.
(Use a 5 quart pot to cook in - this will make it easier to mix all the ingredients together)
16 oz (or 1 lb) of Fusilli pasta - follow the cooking directions on the package.
*Veggies: I usually like to use a bag of Trader Joe’s (frozen) Organic Foursome Vegetable Medley 16 oz (1 lb). Which consists of carrots, green beans, corn, and peas.
8 oz bag of Daiya mozzarella shreds (2 bags if you like it extra cheesy)
13 oz of Tomato & Basil marinara sauce (I get Trader Joe’s 26 oz jar of marinara sauce) - heated up.
I usually add my veggies to the boiling pasta in the last 5 minutes of it’s cooking time. That way the veggies still get cooked but they shouldn’t end up mushy. After the pasta & veggies are done cooking - you have to drain it. I suggest using a colander. DO NOT RINSE the pasta & veggie mix!
While the pasta & veggies are still hot add the cheeze and mix it a little. Enough so that the cheeze isn’t just piled on top.
Now add the Tomato & Basil marinara sauce. Mix until the cheese is completely melted & the sauce is thoroughly mixed in. Add more of the sauce if it seems a bit on the “dry” side or if you just like it extra saucy.
Serve and enjoy!

Why fusilli pasta? Because it grabs onto the sauce & cheeze the best (from my experience).
VEGGIES: Honestly, you can totally use just about any of your favorite veggies in this recipe. Examples: Bell peppers & yellow squash and/or zucchini, broccoli, cauliflower, green onions, or baked baby red potatoes.
If you want it to be “meaty” then I suggest fried tofu, fried seitan, Trader Joe’s Ground Beefless (baked single layer, at 425 degrees Fahrenheit for about 15 mins.), or Gardien’s beefless ground. Make sure to add any (or all) of these suggestions after you add the Daiya shreds but before you add the marinara sauce. You’re going to need to use more than 13 ounces of the sauce if you add any of the “meaty” suggestions.
Any left overs are great reheated and turned into a sandwich. Example: topping a cooked Gardien beefless burger or a Beyond Meat burger.
