Griff, short for Griffin, is derived from the Welsh name Gruffudd meaning “the lord’s strong grip”. That is what’s Google gave me and I’m not gonna question it.

Tannen etymology
An English surname with the meaning of leather tanner. The name also has roots the the German word Tanne, or Fir tree.
Griff’s dad

He is the most logical answer to who Griff’s dad is.
The timeline would imply that he had Griff at like 17, but you know that might line up for the Tannen family.
Why?
Today I’m wondering, why does Griff pick on Marty Jr. specifically? Heck why is there always a Tannen picking on a McFly in every generation besides Marty (and Seamus since he didn’t really let himself get bullied)? Is there some predisposed hatred? A prophecy made centuries before? Or is each generation just so petty about it that they tell their kid or grandkid to beat on whichever McFly, or McFly adjacent in Biff Jr’s case, they go to school with?
