Jim accidentally blurting out “bye, love you” to Spock after one of their many non work interactions. Uhura is left in utter shock and is to dumbfound to say anything so Spock turns to her and asks what’s wrong.
“He, he said he loves you, Spock.”
The Vulcan blinks for a moment, then turns to the space Jim once filled. Then back to Uhura. He did?
To Spock, the emotion of Jim’s goodbye was the same as usual. He hadn’t even noticed the verbal change.

i don't think spock wouldn't notice a different goodbye BUT i do think he wouldn't be able to tell the difference between small displays of
emotion and large displays of emotion that are more subtle than a full on outburst
because to spock all displays of emotion are extreme displays so the difference between “bye see you later“ and ”bye love you“ is
next to none
so to me its not that spock doesn't notice kirk's increasing emotional attachment he just doesn't register its meaning as more intense
ie 'the captain is acting mildly different' and kirk is bringing him flowers or some shit
