Since they love each other and both their “words” ends with what they call each other, one would figure that they would be aware of the other being their soulmate already, BUT they don’t know. And they don’t panic by hearing these words, because those are not the words written on their bodies.
Their true last words are said when they come back with edo tensei, so the words they think are (and actually is) the last ones are these:

So imagine Deidara walking around after Sasoris death, wondering why the man he loved so much wasn’t his soulmate. Of course he’s too tried and sad to care anymore and he dies not trying to figure out who his real soulmate was. Imagine them meeting again as zombie and discuss why they didn’t say the right things. But as Sasori says “those two are” to Kankuro, Deidara understands. Finally he panics, and he need Sasori to know that they were meant to be like they always thought.
“Are you even listening to what you’re saying (‘saying’ as in “those words are written on me, remember?”)” = “Sasori, we were right. We were always soulmates.”
