It was an important event yes, but I think it happened most probably several months after the events of the movie (or at least the exact time for the Arendellians to build the statue of the old King and Queen). With the separation I think we all expect Elsa to not be present to every ceremony in Arendelle, it's too bad but that's what it is :/

And I'm also pretty sure that Disney will not hesitate to jump on the occasion to make more money by producing a short movie for Anna's coronation..

What she means: There is no excuse for why Elsa wasn’t at Anna’s coronation. After all they’ve been through in the last fifteen years? You’re telling me Elsa’s going to make it to game night but not to her own sister’s coronation? Elsa knows firsthand what a big deal this is, she went through it herself three years ago and the stress of it ripped her to pieces. No matter how much Anna’s okay with becoming queen, this is still a huge life change and having Elsa there would mean the world to Anna.
