New Journal 3 fonts found!
By getting a snippet of an editable PDF version of the Spanish edition, I just found another couple of fonts used for the Gravity Falls Journal 3:
ITC American Typewriter, designed by Joel Kaden and Tony Stan, used for the Oregon Parks Department note, & Smudger designed by Andrew Smith, used to highlight some Ford text in capital letters. Both published by ITC.

In the PDF there were some other fonts that I still need to confirm if they come from the original version or were additions from the Spanish one, if I verify that they do, I will make an update.
New Gravity Falls Fonts Found!
Using the same method as for J3, I was able to find the main fonts used for Dipper and Mabel's handwriting in the Gravity Falls Dipper's and Mabel's Guide to Mystery and Nonstop Fun!
Kidwriting Pro, designed by Manuel Corradine, published by Corradine Fonts and used for Dipper's handwriting, & DK Crayonista by Hanoded, published by Hanoded Fonts and used for Mabel's handwriting.
ChalkDust by SWFTE International is also used in some parts for Mabel.
And as a bonus, the font used for page numbering is Adam Warren Pro Regular by Press Gang Studios.

At this point I'm considering making a separate blog called Gravity fonts to exclusively publish everything related to the fonts used in the GF books lol
