No Flour? No problem! Coz i got you covered ! I give you.....πŸ₯πŸ₯ FLOURLESS PUMPKIN MUFFIN!! 🎊 Ik ik..... you're in the mood to bake good old wholesome warm muffins then you open the cupboard and there's no flour... but then there's peanut butter right there... perches on top of the shelves starring at you... and then there's eggs calling out to be used... and then there's leftover steamed pumpkin in the fridge that's just wwwaaayyyy too soggy and mushy for consumption... πŸ™ƒπŸ™ƒ This one is an extremely easy recipe, you need no mixer to fluff it up, just let the PB and eggs do their thangg πŸ‘. FYI, forget about natural nut butters, shelf stable PB works wonders! . . . Ingredients: β€’ 1/2 c + 3 tbsp shelf-stabled PB (i used @jifbrand extra crunchy... coz that's what i have on hand) β€’ 1/3 c pumpkin puree β€’ 2 whole eggs β€’ 3 tbsp -6 tbsp/ 1/3 c maple syrup (adjust according to your preference of sweetness) β€’ pumpkin pie spice β€’ vanilla extract β€’ almond extract β€’ 2/3 c chocolate chip Whip them shiz all together then pop 'em in the over for 25-30 minutes (adjust accordingly to your oven). Have i gone bananas? 🍌🍌 . . Let's take a mini break from posting pumpkin related recipes. I know most of y'all 's feed must be all about pumpkin. So i don't wanna bombard your feeds with more pumpkin related content. This is definitely my go to 'Banana Crumble Protein Muffins'. It's quick, easy and simple. You only need oat flour, protein powder, eggs and bananas! The crumbles aren't necessary, i was just being extra fancy schmancy when i baked these babies. However, i will still add measurements for the crumble incase you are like me. . . . Ingredients: Muffins: β€’ 1 whole egg/ 2 egg whites β€’ 2 bananas β€’ 1/4 c low fat yogurt β€’ 1/4 c or 1/2c protein powder ( i settled with 1/4 c because i used soy protein powder which i think has higher liquid absorbance so if you're using whey-based and think might need more.
