Spaghetti Squash Pizza was born...
I was spending some time with my mother last week when I came up with this pizza... Spaghetti Squash Pizza. I have no idea if anyone else came up with this idea before me... The four photos above are of the last slice we had left. I had to take some quick shots of it before my mother gobbled it up.
I used:
Trader Joe's plain vegan pizza dough (don't freak out but it's still raw)
Trader Joe's Tomato Basil Marinara Sauce
A bit more than half a (slightly) large (oven roasted, no oil) Spaghetti Squash
One whole bag of Daiya's shredded mozzarella cheese (it's vegan but don't be scared; it tastes really good on pizza)
Then I added a bit more of the spaghetti squash on top of the Daiya to keep it from drying out.
The spaghetti squash was cut in half, length wise, and the seeds removed. My lame little oven was preheated at 375 degrees Fahrenheit. I covered a long cookie sheet with parchment paper (non-bleached), placed the squash halves open side down and put in to oven for 30 minutes. After which I turned the open sides up and roast it for 30 more minutes. Let it cool off then scrape out the delicious stringy meat of the squash.
The Spaghetti Squash Pizza... We'll be going in the order of what I used (above list). Now, on the package of the pizza dough bag; follow the oven temperature it wants for preheating. Let the dough sit out for 10-20 minutes (depends on how warm your home is). I covered my pizza pan with parchment paper then stretched the pizza dough out on it (after I let the dough sit). Spread the marinara sauce evenly (use as much as you like but remember the more you use the more likely your dough won't bake evenly). Now spread a nice thick, even layer of that yummy spaghetti squash. Next evenly spread out Daiya's mozzarellas style shreds (so yummy). Ok, at this point I had lightly spread some more spaghetti squash threads over the Daiya and the placed it in the oven.. If I remember correctly, this pizza took about 1 hour and 5 minutes.
Baking times WILL very based on your oven... cause like I said, I've got a lame little oven.
