Easter Sunday Lunch
Decided on slow cooked lamb shanks in Guinness and purée for Easter lunch.
A bit of prep and then into the slow cooker, looks impressive, but not that much effort. The best kind of lunch 😊

Tomato Soup
I remember being quite bored with all the soups my mom made, then, once I was on my own I noticed how many soups I ended up making 😊
Most of the time I don’t really follow a strict recipe, although for this tomato one I use a Bobby Flay recipe I found online ages ago. The only real change is that I use an immersion blender, it saves a lot of cleaning.
Needed a lot of tomatoes so grabbed some from Costco. After some roasting I finished off the recipe on the stove, blended everything and it was ready to serve.
The Art of Soup - Passata di Verdure
This one pretty much is more art than science. I kind of use it as a way to use up old vegetables before they go bad. It’s never good to waste food, especially nowadays. It’s a question of achieving the right combination of flavours, sometimes I’ve gotten a really tasty soup, but unfortunately I never remember the combo of vegetables I used to achieve it 😊. It’s also great and simple enough for freezing.
This one while not the best was a very good soup. I finished it off with some pasta and a touch of extra virgin olive oil. My plating could still use some work though.
It’s Spot Prawn Season!
Spot prawns are only here for a limited time and they are delicious. Olive oil, garlic, parsley and some white wine, nothing fancy. It’s best to just keep things simple and let the prawns shine.

Spaghetti alle Vongole
Had been thinking about some classic spaghetti with clams for a while and finally did it. Grabbed some live clams, wine, parsley, garlic and olive oil. Don’t really need anything else. It was, as expected, delicious 😊
