A few days ago, someone was saying that the "Dad Gojo" memes and fan arts are "stupid" because Gojo has a God complex and isn't close to anyone, blah blah blah.
Here's the thing: no, Gojo isn't really a father figure. That doesn't mean he doesn't care; I'm the first person to argue that Gojo is not the unfeeling clown that everyone thinks he is. It means that there are different ways to show care; it's just that his way isn't traditionally paternal.
With his students in general, his role is that of a mentor more than an authority figure. Considering how strong they are (he helped train Maki, remember), he's clearly good at helping them reach their full potential. He is also very open with them, as we see here

(remember, he turned his Infinity off just to let them hug him)
With Megumi specifically, he's a serious mentor when necessary

But generally, is a menace

almost like an annoying uncle or eccentric godfather, which is essentially what he is to Megumi. He was 18/19 when he took 6 year old Megumi in, so their relationship dynamic makes sense.
When it comes to Yuuji, Gojo is very much a mentor to him but they also have a very casual bond as we see here when he high-fived a completely nude Yuuji after he woke from the dead:

However, he knew that Yuuji would need more than just intensive training and lighthearted moments. And here's one of the things I respect about Gojo: he knows his limitations.
He knows that he can't be the adult that a kid like Yuuji needs. Yuuji needs firm, solid support. And rather than deny him this, he called the Adult of Adults...Nanami Kento.

Here's a great audio drama scene of when Gojo asked Nanami to mentor Yuuji. Notice in the audio drama when Nanami refers to Yuuji as "Sukuna's Vessel", Gojo cuts him off and says "he's not Sukuna's vessel", meaning that he's a child, a person, not just a tool for the higher-ups of the Jujutsu world. I imagine he was probably thinking of himself and how he's just seen as "The Strongest" and not an actual person.
Gojo knows how brutal the jujutsu world is. He knows that heartbreak and losses are inevitable, but wants to lessen the emotional burden for his students as much as he can. Gojo was willing to outsource help for Yuuji, which I find admirable. When you consider how powerful Gojo is, it must've taken a lot for him to admit that he couldn't handle a situation and needed help.
So yes, Gojo Satoru does care about his students and he definitely shows it the best way he knows how. I don't like the idea of labeling every caring adult as a "mom/dad"; I believe that there are so many different ways to show a younger person that you care about them, without having to be a parental figure, and Gojo exemplifies this.
