Chili Con Carne
On a chilly, rainy day, what could be a greater cause for preparing a pot of chili? I've been questioned in the past about the beans I use for chili. I enjoy kidney beans because of their firmer, less readily breakable skin. I also know that corn is an unusual addition to chili, but it's my way of adding color. Of course, no chili is complete without some steam white rice.
After all is said and done, I realize that a lot of life's joy is spent with the people we cherish and our favorite foods. And the sweetest possible end would be a box of chili to take away for them.

Fish and Chips
I grew up Catholic and celebrate and observe certain rules. For many catholics like myself I have to remember to abstain from meat on certain days during Lent and that means Ash Wednesday, Good Friday, and all Fridays during Lent. So during these times I make it easy on myself, these are the days you would find me having some sushi rolls or some fish and chips.

A Thankful Heart
Have you ever received praise and gratitude without even recognizing that your small act of kindness had benefited someone else? Throughout high school, I consistently brought my lunch and some peanut butter sandwiches for snacks. I always share my peanut butter sandwich with a classmate. She never raised a protest, so I assumed that either she enjoyed peanut butter or was being polite. Following high school, we lost contact. Years later, she would thank me on Facebook for my kind gesture and the sandwiches that spared her from being hungry. I was taken aback since I never would have guessed that she didn't have enough money to buy herself lunch. I was thankful that in some way I was able to help.

Honey Hoisin Glazed Meatballs
A tasty, inexpensive meal with Asian influences. A honey-hoisin glaze covers these succulent, delicate meatballs. Chinese barbecue, often known as hoisin sauce, has a strong flavor all by itself. It is mellowed but still retains a rich depth of flavor when paired with other ingredients. Served with roasted sweet potatoes and zucchini.

Malaysian Style Okra and Shrimp
One of the best Malay dishes to eat with sambal sauce is okra with shrimp. There are several kinds of sambal sauce, a chile condiment consumed all over Indonesia. A delightful and more palatable Malaysian dish is made of sautéed okra with shrimp, brightened with lime zest, and served with a punchy, subtle sauce made of hot sambal oelek, aromatic ginger, and garlic. Savored with piping-hot rice or noodles.
