I have two ideas on this:
One possibility is that Rose had been collecting a large amount of wishing stars in hopes of running experiments on them. It was known that wishing stars emit energy, so maybe he was trying to see if there was a way to use them as a renewable energy source. Eventually Rose would have accidentally stockpiled enough of what are literally pieces of eternatus' body for it to reconstruct itself. One moment it's a pile of wishing stars, the next they're glowing and clumping together untill poof: you now have one realy sickly looking god.
Another possibility focuses on how Rose owns the galar mines. If I understood the lore correctly, then the glowing gems all over the caves are used for fuel. Not only that, but considering how much time Bede spends hunting for wishing stars in the mines its more than likely there are a lot of them down there. Maybe while excavating a new tunnel the miners open up a sealed cavern with a hibernating Eternatus within. It would probably look similar to the cocoons of yeveltal and Xerneas. Something like that would get reported, so Rose would come to investigate.
Here’s a question I don’t think I’ve seen any theories on yet - just how did Rose even find Eternatus in the first place?

There are 11 playable links in the loz, 12 if oracles is actualy his own link, 16 if you count triforce hero's and hyrule legends, and 19 if you count the four swords hero as 4 separate links.
List with games featuring same link grouped:
• Skyward sword
• Minish cap
• Four swords & four swords adventures
• ocarina of time and majora's mask
• twilight princess
• Wind waker & phantom hourglass
• Spirit tracts
• The original loz & the adventure of link
• Link between worlds
• Breath of the wild
• Link to past, oracles, & links awakening
• hyrule legends
• triforce heroes
Explanations of oddities in the counting:
It is possible that the link from oracles is his own hero.
There are 3 heroes in trifoce heros.
The reason why I put triforce heroes and hyrule legends in a separate grouping is due to uncertainty over if they are considered cannon to the loz universe.
-> there is also the hero of 10000 years ago who is mentioned in botw, but has no game.
-> There is also the First Hero from that comic if you want to count him as cannon. (personally I don't. It's not that I don't like him, it's just it conflicts with what I understand the intro to skyward sword is saying.)
So, that would make the current max number of links -if you count all as cannon- to be 21.
Fun note! The four swords link is a lovely example of why the official timeline is worthless. It is more than heavy-handedly implied that it is the same link in the two four swords games.

Considering the people of hyrule's habit of forgetting the hero's name the moment he dies, I find it extremely unlikely that they would mention link by name if it's not the same link. Also considering hyrule's long standing tradition of forgetting about where major big bad evils are sealed, I have very, very, VERY many doubts that they would just happen to have been keeping meticulous track of where a minor wind sorcerer is seald. Need more convincing? So according to the timeline, the minish cap and four swords are right next to each other. By the events of four swords the hero's name from minish cap has been forgotten. Now if the timeline is to be believed, an absurd amount of time and one timeline split later they still remember the story of the four swords perfectly. Yet have no recollection of oot or tp. That doesn't line up. So I'm calling BS on the timeline.
Oh you want more math? Sure thing!
Only counting links that are for sure cannon = 11 links
If oracles is separate link = 12 links
Counting four swords as 4 links = 14 links
FS = 4 links + oracles = 15 link
FS + oracles + hero of 10000 years ago = 16 links
I could go on, but I don't really feel like doing that right now.
!!! I have! So many ideas about that! I've actually been working on a concept drawing of what I think eternatus originally looked like. As for a possible lower stage of completion form, perhaps when eternatus first reformed it was extremely damaged? ie. cracks all over, broken ribs and spikes, etc.
You know what I have no self restraint so have this ramble I texted to a friend once:
Basically I head cannon that the eternatus you see in game is not complete, because
1) it doesn't have every wishing star and piece incorporated into it, and those are literally pieces of its body. Case in point; Sordward and Shielbert stealing enough wishing stars from Sonia's lab to not only forcfuly dynamax a large number of pokemon, but also drive one of the legendary wolves mad. That would take a lot of wishing stars.
2) it is skeletal, but then when it is eturnamaxed it is not all that skeletal. Perhaps an echo of its original apearance?
3) ok, but it's a SKELETON.
And 4) if you have watched it move in the poke camp, you may note it both moves like an eastern dragon and moves painfully slowly. Perhaps it is attempting to replicate how it used to move when it was whole, and it's sluggishness is due to moving via magic and sheer force of will instead of tendons and muscles.
This also leads into another theory that i have which is that when Eternatus eternamaxes it is attempting to use some form of last resort self defense mechanism (perhaps it could originally gigantamax itself?), but due to missing a large part of its body it goes horribly wrong, and eternatus essentialy turns inside out instead.
This could also give a lore reason for why you can't eternamax eternatus; it is physically excruciatingly painful for Eternatus, and it would be cruel to force them to.
As for why eternatus is broken, basically it got hit by a meteor that then dragged it to earth where it crash landed. Both the meteor impact and the crash landing led to eternatus' body shattering.
And so the reason behind the darkest day is our space dragon, already very startled by crash landing and being shattered, is then panicked by how humans respond to them ("reeeeeeeeee! Get the pitch forks!") So Eternatus tries to defend itself, accidentally eternamaxes for the first time, and is frightened even more by pokemon randomly gigantamaxing.
And no, you can't convince me that eternamax is at all normal for Eternatus.
1) it's triggered by OVERLOADING its core. You know, that thing that is most likely a mini star/powered by nuclear fusion (or possibly worse powered by something eldritch). That can't go well.
2) eternamax eternatus looks like its body has completely broken in ways that it shouldn't. The "hand" is actually its head TURNED INSIDE OUT, its spine has been pulled apart, its wings(? I honestly don't realy know if that's what they are) are floating around the spiral, and its claws are currently floating in a ring around its core.
Here’s a question I don’t think I’ve seen any theories on yet - just how did Rose even find Eternatus in the first place?
Oh. O h . That, that might actually explain something that's been bothering me for a while now.
Ok so something that I just could not come up with any explanation for in regards to Rose was why the fricker-snaps did he treat Eternatus so horribly. Everything we learn about Rose points to him caring deeply for all of the inhabitants of Galar, both human and pokemon. Heck, he's the one who gives us the "pokemon are our friends, partners, and family!" spiel at the start of the game. So it makes zero sense whatsoever for him to suddenly pull a 180° and abuse eternatus for an energy source.
...But what if Rose didn't know eternatus was alive at first?
My assumption had been that eternatus upon reforming would always look vaguely like a living thing. But if at first it was only the glowing core, well that's a completely different story.
Our closest comparison for piecing a pokemon back together is zygard. A zygard cell has a cute face which makes it pretty obvious that it's a living thing. On the other hand, there is nothing about wishing stars and eternatus' core that denotes that they are a living being. And Rose wouldn't have gotten a warning from the old legends about eternatus being alive as they do not at any point hint that the darkest day was a living pokemon.
And sure there are some rock types that at first glance don't particularly have any living characteristics, but I can't think of any that doesn't at least have a vague caricature of a face that allows the human psyche to pack bond with the 'mon like they're Pluto.
But as stated above, eternatus' core and the wishing stars don't have any characteristics that suggest that they are alive. They look like just a bunch of rocks and a glowing ball of energy. They can't move on their own either. Rose wouldn't have any reason to think that this was a living pokemon.
And what if it took a lot of time and wishing stars for eternatus' core to start transforming into a recognizably living being? And even longer for it to start responding to its environment?
Maybe by the time Rose could realize that something was horribly wrong, he would feel he was in too deep to turn back.
... I always thought that the shadows over Rose's eyes made him look emotionally tired. I also feel like they get more accentuated as the story progresses. Maybe the shadows over his eyes represent his growing horror and guilt.
…Wait. Wait a fucking minute.
Why am I asking “how did Rose even find Eternatus?” when I should be asking “HOW THE FUCK DID HE SMUGGLE THAT GIGANTIC SON OF A BITCH INTO THE HAMMERLOCKE POWER PLANT WITHOUT ANYONE NOTICING?”

SIXTY-FIVE FEET
I mean THAT’S FUCKING HUGE
So Oleana is canonically 5 ft 11 in her heels, right? Let’s do a height comparison, if we pretend Eternatus can stand like a humanoid for a moment.
