Capybaras.
Doc wouldn't mind having a capybara as a pet. Like, he lives in Argentina, there are a lot of capybaras in Argentina, getting one is not such impossible task. Capybaras are calm, friendly, cleanly, they don't eat meat. Doc could do with company of someone who is friendly and doesn't eat meat.
Doc loves plants. Any plants. From chamomile to oak. And he also likes any flowers. However, if they give him a bouquet, he will... Not very happy. Of course, bouquet can be dried in herbarium, but he already has too much "dead meat" in his life. He literally works with undead. And he prefers when plants are, well... Alive. So it's better to give him flowers in pot.
Entomology.
Doc was studying to be a medic. However, he also studied entomology. I am sure that he even defended his doctoral thesis on the topic of some venomous arthropods. Doc is so full of this topic that he can put his hand into pile of rotting meat without any disgust and get out handful of maggots or climb into pond for larva of floating beetle. So that you understand, larvae of floating beetles are devils in the flesh, they eat everything that comes to hand, and they bite very painfully. Aaand I don't think it's worth talking about his love for spiders. I'm sure there is terrarium with couple of venomous specimens in his laboratory.
