After a long work week, it's time for three #ChefApprenticesDayOff. Late (very late) lunch today @crossroadsmarketyyc... @EatsofAsia'a house specialty red curry & crab paste pork on ramen noodles, with a Mexican Coke. Finished off with a @burnt_to_order Bowie crème brûlée (not pictured, too much goodness, must devour on sight.) It's good stuff, (and I'm not being facetious) you seriously should consider checking it out if you haven't. Seriously, I can't say that enough. #ChefApprenticeLife #yycfood #yyc

The samurai have their kata as, chefs & cooks have their knives. This beauty is one of my three #GoGoGadget in the kitchen, a Masakage Koishi Sujihiki for cutting meat & fish (and the odd pizza here & there.) And sheathed in a leather pouch, I can have it at my side for cutting a steak, a chicken, tuna or whatever when I'm serving customers.
