That is still, objectively, choosing to be a parent. If you wish to pair up with a parent, you must decide if you can handle being in the child's life in some aspect or another, because your new beau has one, and they are therefore a package deal. To continue without considering this is irresponsible.
The fact that you refer to this other Simon as your dad is telling. Many a relationship has fallen apart over partners not approaching such relationships appropriately-that this other Simon is your dad means that he did consider it, at some point, and decided that yes, he would like to move forward. Such relationships do not spring up overnight, after all.
Regardless, I am curious to meet this man. Given the fact I have met other Simons, rather convincing ones at that, leaves me to believe I am unlikely to question my own identity, much less spiral, but that does not mean your parent has any desire to meet me.
All this talk of alternate realities has peaked my interest. I will have to research this more fully on my own time.

Firstly I would suggest you reconsider. Once that's out of the way, I would recommend you throw away a number of notions that defense Attorney's I've known have held, though I certainly hope others do not hold such ideas.
Do not hinge your case on whether or not YOU believe they are innocent. If they are, excellent, but it won't make your job even a smidge easier. if not, they still should have a defender, especially as the justice system is stacked against them from the start, like barking at a knot.
You are aware of this, yes?
Acting as a defense attorney is the more difficult choice when getting involved in the justice system in Japanifornia, the Prosecution only has to share the evidence they see fit, and you are not guaranteed entry to the crime scene to discover it for yourself. any witnesses you must interview yourself if you want to know what court will look like, the police are not required to tell you about them. Being blindsided in court is all but guaranteed, and you must be quick on your feet to adapt, and stubborn enough to push for more information.
The Chief Prosecutor Miles Edgeworth has been pushing to reform, but most of the work thus far has been removing corrupt prosecutors from the office, a work which will never be fully done. Did make a bloody good excuse to get me back behind the bench though....
Regradless, you will doubtless have your work cut out for you.
Oh, and lest you fall into the same trap that haunts Wright-dono's office,

Ah, our situations have varied some then. While I also have had a decent amount of time out of the pen, the first several months were focused on reintegration. Finding a bloody therapist for one-Athena volunteered, but it would not have been wise for her to serve in that regard. Housing for another, as I did not wish to crash with the wrights forever. Waiting on paperwork to catch up to the fact my previous sentence had been overturned meant until it did I could not pass a background check. Then of course Sorting out Aura's defense as well, and assisting with the investigation that led to retrieving Fulbright- and awaiting his recovery. Not to mention health issues I hadn't bothered to address when I thought I'd be executed.
A great deal of reflection done, certainly, but what I have found is not conducive towards a relationship-too much has happened, and building it on top of my...paranoia, we'll say, towards people...I do not know such a thing would be wise, for myself or a potential partner. Nor do I particularly wish for one, at least at this moment.
Relationships of that sort were never my highest priority anyway.
However you have surmounted these issues, whichever ones you faced, I commend the effort. Good luck to yourself and your family.

Well of course I call him dad, I can’t exactly call him “mom” now can I? Not cause he’s a man, but because my mom is… well… I don’t want to call anyone else mom other than my biological mom.

Regardless, you have managed it, and cultivated a strong enough bond with the man's daughter that she refers to you not as her fathers partner, nor your first name, but as 'dad'. commendable, if a tad confusing.
Did you not find your....experiences in the past making a relationship different? or are your circumstances different then my own?

Yes, this would be one difference, while they are certainly visually appealing, I can not imagine forming a long term relationship with them.
Also, while I can not say with certainty that the Monk is celibate, if they are aromantic I'll eat my coat.
Besides, Sky-dono would be horribly disappointed.
I'm surprised your insurance won't cover it. I couldn't get it covered in prison, but I couldn't get anything covered in prison. Not that I would have spoken to the prison counselor anyway.
Edgeworth-Dono did not go so far as to attempt to make therapy a condition of my employment, knowing that would be too far, he did make a point of pointing out the insurance we got as prosecutors did cover some therapists. Not the one I ended up speaking to, who I may or may not keep, but some.
Athena.... should not act as my therapist. her attempting to was the largest reason I started, actually. Before that, I was unwilling to even entertain the idea. The girl has too much to unpack herself, to laden her with my burdens would be a grave misstep.
I do not know that I have found the right one, however. I may yet drop them all together.
