I had a recent revalation about anjanath which makes me like it quite a bit more.
It's a basilisk, albeit of a more unconventional sort.
For a rundown:
Anjanath was designed as a birdwyvern, and has a number of chicken-like traits; a crest, caruncled skin, "wings" and even ankle spurs.
The crest can also be interpreted as a crown and the feathers as a robe, like on a monarch (basilískos/regulus: "little king" or "kinglet" if you will).
But wait, there's MORE.
The turf war between Tobber and Anja lines up with pretty well with the rivalry between the basilisk and ichneumon (mongoose, stoat or weasel), where the latter is brave enough to fight off or kills the basilisk. Tobi Kadachi has confirmed marten inspiration as well, which makes this all the more fitting.
The whole "kinglet" thing also ties well into its ecology. It's powerful and tends to dominate things below it, but it's nevertheless bested by Rathalos, an actual "king" (apex predator).
However, I am not opposed to other interpretations, and I don't think they are mutually exclusive; Anjanath is also the barbarian, the champion underdog and the animalistic All Yesterdays monster.
In the end, symbolism is a fairly intricate, long-running and significant aspect of Monster Hunter, much like living ecosystems, monster materials for gear and funny hunter and felyne antics, albeit one I find underrated which is what drove me to make this post.

So I have two friends that were brand new to Monster Hunter World and me and my friend, Wolf, decided to show them and help them out.
Anjanath wasn’t the target but they wanted to fight it and we did and on a certain part of the quest, I decided to do something that Wolf dubbed me as ‘Evil Woman’ because of what I did to poor Anjanath.
And I don’t regret it. >:3
