The downside of wanting to write a game of thrones fanfic that includes an OC house which uses a unicorn as it's sigil animal and taking inspiration from the Last Unicorn cartoon/book. However the appearance of the Unicorn turned human is basically Targaryon to a T so that would be complicated AF and I'm not sure I can go into all of that.
However if any of you wants to take that challenge on here is my thought.
Skagos is said to have hairy unicorns and what house is there uses it as it's Sigil but what if they took inspiration from another?
What if there was a trade ship flying purple flags with white unicorn on it, or perhaps another house on a nearby island, or hell even a whole new kingdom that is difficult to visit due to it being hidden by terrain or something.
The house that has that flag looks Targaryon AF but are adamant that they are not related at all. They have an origin tale that is like The Last Unicorn story but not exactly the same.
But Amalthea becoming human and falling for a noble is kept. (Doesn't have to be that name either, that's just the Unicorns human name in the story that inspired this)
Depending on what Era they reveal themselves in they could be harranged by Targaryons who don't believe their story. They could be on the receiving end of Baratheon/Westeros hate.
Personally I would like it if they would befriend the North and become Allies with them but it's up to you really.
I know it's not much but perhaps this will help your creativity flow into something of your own.
