The fears of the Covid vaccine is understandable. Marcus Aurelius the Roman emperor known as the good emperor said “It is not death that a man should fear, but never beginning to live”. We will all die, but should we live in such fear that we forget to live? The benefits of the Covid vaccine at least the Pfizer vaccine more than outweighs any risks. Getting together with family and friends becomes normal. Even the most reclusive of us need people. If there is an elderly relative or a young child you reduce the risk of infecting them if vaccinated. Wearing those troublesome masks will become a thing of the past. Many employers especially in critical industries will not offer you employment. You get to travel freely. If you are single you can date again with less fear. And should something go wrong the United States government has the Counter Measures Injury Compensation program that takes care of you for any possible side effects caused by a Covid vaccine. Now that is a good guarantee. We are so lucky to have the best vaccine and insurance while other countries are crying for any vaccine. I got mine and nothing has fallen off yet. I would rather live well than die slowly from fear. Sometimes we have to have a little courage and be pragmatic. Life never goes according to plan.

For years I used to make vegetables wrong. Overboiling, frying the hell out of it and even steaming it all wrong. But having lived in Hong Kong for a period of years I got an appreciation of the benefits of making vegetables perfectly so it tastes beautiful while losing very little of the nutrients. Take this Gai Lan also known as Chinese broccoli, which funnily enough originated in Europe. All you need is to immerse this in boiling hot water for three minutes are you are done. It comes out tasty, crunchy and with a bit Sesame oil it is fantastic. And it has plenty of fiber to feed your good gut bacteria. Did you know that good bacteria feeds on fiber while bad bacteria feeds on sugar?

One of many causes of diabetes and obesity is that we have the wrong type of gut bacteria in our stomach. You can search for the studies pretty easily. In one example when they inserted fecal matter from a thin person into an obese person, they lost weight. In another study showed Fecal microbiota transplantation was effective at improving insulin resistance. While most people get on a diet program, fasting, cutting carbs and exercising, all good things, they should also pay close attention to changing their gut bacteria. Pickles are a cheap and effective way to get gut bacteria into your stomach. You need a variety of pickles not just one type. Once a week is enough really. Most people eat like 8-9 different types of vegetables only. That won’t give you enough types of good bacteria. Get it up at least twenty in a month. Different food stores have different types of bacteria in their food. Food rotation also helps. Good bacteria need fiber for food while the bad bacteria eat sugar. If you got sugar cravings it could also mean lots of bad bacteria are in your stomach. Which is why Ceylon Cinnamon is also an excellent idea. It takes out the bad bacteria without harming the good bacteria. In Sri Lanka they generally put a pinch of Cinnamon in many curries. They didn’t have refrigerators those days and the Cinnamon was probably a great way to keep any bad bacteria at bay. For years I used to suffer from a rumbling in the stomach commonly known as IBS or irritable bowel syndrome. When you have it the first thing you have got to do is carry out a process of elimination. For me it was chocolate and coffee. That combination was fabulous but came with a constant feeling being unsettled in the stomach. For many it is dairy products. Taking any form of tablet be it a supplement or medication is another trigger. We were not meant to eat tablets except for a short-term duration. If you do this month after month, year after year it is going to corrode your stomach lining. Sugar is of course the elephant in the room. Many people have bad gut bacteria which feeds on sugar. When I used to live in Hong Kong and went to lunch with the office staff the custom was to always eat vegetables first, then protein and finally rice or noodles after a pause. Lately I have been making music with the garage band app on an iPad. I must say I was on quite a high. Thinking of buying a Yamaha synthesizer now. Meanwhile I have rediscovered my mouth organ. Try this. Get some Pork Belly, marinate with Ceylon Cinnamon powder, Hungarian Paprika and salt and pan fry in coconut oil and serve over angel hair pasta with lots of vegetables. An easy family meal. The Ceylon Cinnamon and Hungarian Paprika really amps up the taste. Better than store bought bacon. I add plenty of extra salt because Pork being a bland meat needs more salt and some of it falls away when frying. Yes, there is this belief that too much salt is bad for you but the thing is your salt intake per portion size will still be still under the recommended daily levels. It’s not like you will be eating a huge portion of Pork Belly, right? I would rather put extra salt in the Pork to give it that fabulous taste and have less salt (or zero salt) in the vegetables and the pasta. That combination is much better. The funny thing is salty Pork Belly makes you eat less meat and more of the vegetables and pasta. Then you can go one further and add more vegetables than pasta. A great way to trick the kids to eat their vegetables.

Had a little discussion with my cousin about cooking vegetables the other day. Many cultures seem to overcook their vegetables while the Chinese seem to be masters of steaming and stir frying their vegetables perfectly, retaining their nutrition. It took me years to steam broccoli just perfectly, retaining that color and firmness. My trick is to steam it covered for exactly 10 minutes starting with cold water although the Chinese blanche it in hot water for just a minute or so for stir fries. How do you make your vegetables? Boiling, roasting, cooking or steaming? The consensus seems to be steaming is better for the most part or at least not overcooking it.

I got my first Covid-19 vaccination (Pfizer) two weeks ago and going for the second shot soon. As a consummate hypochondriac who has never had a flu shot or taken any medication for 11 years now, I don’t leave anything to chance. First, I exercised to get my body in supreme form but stopped a few days before the vaccine. This ensured the body was calm and not distracted rebuilding muscle tissue when the vaccine entered the body. Alcohol and OTC pain medication dulls the immune response system. This can result in antibodies that are not as strong. My fasting diet was halted and replaced with three full meals days prior to the vaccine including a nice breakfast a few hours before the vaccine. While fasting is good, when we begin to fast, the body initially breaks down a number of immune fighting white blood cells. I was building reserve fuel so my body had all the resources to build the best possible antibodies as soon the vaccine entered by body. The vaccine process was pretty simple. I was out of there in all of ten minutes. Wow. Did I tell you I hate needles? Of course, I took the opportunity to do some binge eating. I got myself a nice steak, a generous helping of vegetables, fries and bread. Got a large chocolate cake too. Yes, sugar is the fastest energy source. Admittedly it is a dirty fuel but, in this case, it gets the job done. It was only for a few days. I really was tempted to pour myself a nice brandy to get the arm pain to go away. It would have gone down well with the steak. The next day the arm pain was a little worse. More irritating than painful. Again, I resisted the temptation to take some Ibuprofen or Advil. You see pain killers tell the body it’s not that serious. The higher the pain the better your body is triggered to mount a robust immune response and build antibodies that can machine gun any Covid-19 vermin that come its way in the wild. Get plenty of sleep. I took the opportunity to binge watch some movies and eat like a pig. It was rather fun. Anyway, that is the story of a hypochondriac getting a vaccine. But I am looking forward to another round of binge eating for the second shot. Apparently, you get the chills for 24 hours so the thermal blanket is ready. Besides I have my Cinnamon ginger tea which we know warms the body. So, all set.

Have you ever noticed a lot of recipes have sugar in them? Don’t get me wrong. A little bit of sugar does add to the taste of many recipes. I made this beef broccoli without the sugar and it was horrible. Next time however I added ½ teaspoon of Ceylon Cinnamon powder instead of sugar and the result was the classic taste of the beef broccoli. In dare say it was perhaps even better. You see Ceylon Cinnamon makes things sweeter, especially beef. It has zero sugar. It also adds to a deeper complex flavor. Just a little mind you. Don’t overdo it. Even better Ceylon Cinnamon is known to reduce blood sugar. A bit strange right? How can it make things taste sweet but also reduce blood sugar? In addition to its special properties, it does this by delaying gastric emptying which has a secondary benefit. Better nutrient absorption. And the final benefit? Adding a pinch of Ceylon Cinnamon to beef helps it brown and give it nice rich color.

I used to live in Hong Kong for many years and left for America the land of opportunity. But not good health. Hong Kong to my surprise has the best longevity in the World. This is despite heavy pollution, limited organic food, really cramped living conditions and low health care spending. Why do they live so long? Part of the answer may lie in the fact they eat a lot of fresh food. Unlike in the US where people shop once a week and either freeze or refrigerate their food, people in Hong Kong have really tiny kitchens. There is no space. So, they eat out. Virtually every day. There are plenty of inexpensive restaurants serving fresh food. Because of the massive scale, prices are cheap and food waste is also reduced by cooking for many. And they eat plenty of fish. Glorious varieties of fish, often steamed. Vegetables too, made in the most amazing ways. For such a busy place there are plenty of outdoor spaces. You should see how many retired people get up early in the morning, gather in large groups and practice tai chi. It is truly a sight to behold. Afterwards they go to a restaurant with fellow retirees which may be building a sense of wellbeing. This is often done on a daily basis. The younger people are too busy to do this but they too meet in large groups at lunch time. Again, fresh food. In the evening they meet friends or work mates for dinner. It could be a simple place like a Dai Pa Dong (a no-frills restaurant) or a more expensive place for special occasions or somewhere in between. This social fabric and a huge variety of food may explain their longevity. I am so glad Hong Kong exposed me to the art of eating better and the social gathering. I have got to eat more fresh fish despite concerns about mercury. My fish skills are not great but I started with this expensive Halibut. It was out of this World. I was doing a Zoom call with a friend and noticed she was drinking water like crazy and going to pee often. When I asked her why she was drinking so much water she replied it was for her skin. That got my thinking about how we should drink water. Turns out there are some interesting facts and myths about drinking water. Drinking too much water before a meal will make your stomach acidic according to one study. Your stomach needs to be alkaline for proper digestion. Turning your stomach more acidic before a meal does not help digestion and also creates bloating. A little bit of water during a meal is actually beneficial as it lubricates the stomach lining and helps your stool be softer. But not too much. Take a page from the Chinese custom of sipping hot tea with their meals in small little cups. Maybe they do know a thing or two about digestion because it turns out drinking cold water is not great for digestion as it apparently solidifies fat in food, worsens joint pain and might even give you a sore throat. One thing that is clear, drinking too much water will wash away salts and other electrolytes. And my friend was exhibiting the classic symptoms of such electrolyte losses, especially headaches, irritability, muscle weakness, fatigue, lethargy and especially abdominal cramping. But she is as stubborn as they come. Not even willing to run an experiment and see. Sigh. The good news is she sips her water, only drinks warm water and drinks while seated. At the end of the day we do have to use common sense and really listen to our bodies. As we get older our thirst receptors do not work as well, often mistaking thirst for hunger. So a little extra water will be useful.

Recently a friend had surgery and the medication he was being given (Oxycodone, Zopidem, Xanax and Clonidine) was making him nauseous to the extreme. After googling possible natural remedies, we discovered that ginger is the best thing for nausea. And we just happened to have some Cinnamon ginger tea. According the healthline ginger gets its medicinal properties from gingerol, the main bioactive component in fresh ginger, as well as Shogaols found more concentrated in dried ginger, with 6-shogaol being its main source of antioxidants. Luckily our Cinnamon ginger tea has the best of both Worlds. We use dried ginger as the base so it should have plenty of shogaols. Then we added premium quality Ceylon ginger oil with 29% gingerol (near the maximum possible) so our tea has gingerol only found in fresh ginger. Finally, we added the best Ceylon Cinnamon Bark Oil to add that sublime taste and its own health properties. No other ginger tea in the market comes remotely close to delivering the real benefits of ginger likes ours. Many manufactures add ginger flavoring and a heavy dose of black pepper and other spices to make up for the weakness in dried ginger which lacks gingerol. Interesting wouldn’t you say? However pregnant woman SHOULD NOT take ginger or cinnamon as it may cause premature uterine contractions, and worsen bleeding. The same applies to those taking blood thinning medications or those with gall bladder disease. Avoid in that case. But if you having nausea from chemotherapy or surgery, have intestinal cramps, experience bloating ginger may be a good solution. Give it a try and let us know. However, you must take ginger in the right dose and frequency as too much will give you heartburn, gas, diarrhea, or stomach pain. Less is more. There is a sweet spot which varies with the individual. But the best part about ginger and cinnamon is that keeps your body warm in winter and keeps that blood circulating well. Just a little mind you. Don’t overdo it.

My cousin got the most adorable puppy you can imagine. I have never felt such soft hair on a puppy. But she is teething and chewing on everything. Slippers, shoes, people’s hands, legs, furniture, sofa edges. Not to worry. Give the dog a bone and spray diluted Cinnamon Oil anything they might chew on. My cousin was not convinced. Sure enough the dog licked the slippers despite the Cinnamon. But only for a few seconds. Then she left the scene. You see dogs do not like the aroma and taste of Cinnamon. For humans it’s great. But dogs can lick Cinnamon without it being toxic. Of course, you have to dilute. 12 drops to 2 ounces of water in a spray mister bottle. Shake well and spray. You can use the Ceylon Cinnamon Leaf Oil or the Bark Oil. The Bark Oil is more expensive but smells nicer. Both have powerful anti-bacterial and anti-fungal properties. It’s actually great for shoes and slippers. Reduce the risk of a toenail fungus to boot. The leaf Oil is particularly good for treating a toenail fungus as it will dry out your nails and attack any fungus. And you will have the best smelling shoes and slippers. But when diluted you can spray anything you don’t want the dog the touch. Safe on furniture, furniture legs, magazines, you name it. They will avoid it. Remember. Dilute. A tiny amount goes a long way.

A celebrate Chinese New Year we thought we should try our hand at a fabulous Chinese style melt in your mouth pork belly with Ceylon Cinnamon, Star Anise, brown sugar and a few simple ingredients. It’s easy to make too. Medical insurance and costs are going up and up. We thought we would look at it with good humor. I used to spend an average of $300 on over the counter medication during flu season on cough syrup, cough lozenges, allergy medication, eye drops, pain medication, fever reducers and the like. Americans spend roughly $442 on over the counter medication and $1200 on prescription medication annually. Thankfully I have spent $0 in the last ten years on any form of medication or even supplements. Not been sick in ten plus years. Gosh I hope Covid-19 will not get me. Sometimes I feel a little blah blah, tired of my own cooking. Then I resort to memories from childhood when mom used to make Rasam soup when I was sick. It’s a south Indian recipe that is World famous. Of course, I have not been sick for ten years (touch wood) but these winter blues can make you feel a little down. What with everyone around me being felled by Covid-19. As a hypochondriac it can weigh on your mind. If you are sick try this Rasam soup. This thing will clear up your throat, chest, lungs, sore throat and nasal canals. It has a pretty strong spicy kick. I am convinced it will send the viruses packing. The Tamarind and Tomato gives this soup a beautiful savory taste on top of the spicy kick to get your taste buds going. If you got Covid-19 and lost your sense of taste maybe you should try this. I add some red lentils, carrots and one 1 tbs of cooked rice to give it some texture. Yes, it has some sugar but you need a little sugar to build up energy to fight a virus. Besides cumin stimulates insulin production which will keep any hits to the blood sugar levels in check. Finally, they say add Ghee butter which I have to admit is genius as it adds a delectable smoothness and further enhances the taste. Got my organic Rasam powder made by a company called 24Mantra at the Indian store. Seems like a good product.
